Healthy Chocolate Chip Bars

Gluten-Free and Dairy-Free


  • 2 cups of old-fashioned oatmeal
  • 1/3 cup of coconut oil
  • 1/2 cup of hazelnut, macadamia, or almond nut butter
  • 1/4 cup of Maple syrup
  • 1 zucchini, grated, water squeezed, and drained
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 tbsp of Apple cider vinegar
  • 1/4 tsp of salt
  • 1/2 semi-sweet chocolate chips (gluten and dairy free, if you are avoiding them)


  • Preheat the oven to 350F.
  • Set aside about half of the grated zucchini to add later.
  • Mix baking soda with apple cider vinegar separately and add it to the rest of the ingredients.
  • Mix everything else in a food processor until you get a smooth dough.
  • Add chocolate chips and the rest of the zucchini.
  • Pour the batter into a square baking dish.
  • Bake 30-40 minutes until the toothpick comes out clean.
  • Let cool completely. Cut into bars.
  • Store in refrigerator for 2-6 days.
