Gluten-Free and Dairy-Free
Ingredients:
- 2 cups of old-fashioned oatmeal
- 1/3 cup of coconut oil
- 1/2 cup of hazelnut, macadamia, or almond nut butter
- 1/4 cup of Maple syrup
- 1 zucchini, grated, water squeezed, and drained
- 2 eggs
- 1 teaspoon baking soda
- 1 tbsp of Apple cider vinegar
- 1/4 tsp of salt
- 1/2 semi-sweet chocolate chips (gluten and dairy free, if you are avoiding them)
Directions:
- Preheat the oven to 350F.
- Set aside about half of the grated zucchini to add later.
- Mix baking soda with apple cider vinegar separately and add it to the rest of the ingredients.
- Mix everything else in a food processor until you get a smooth dough.
- Add chocolate chips and the rest of the zucchini.
- Pour the batter into a square baking dish.
- Bake 30-40 minutes until the toothpick comes out clean.
- Let cool completely. Cut into bars.
- Store in refrigerator for 2-6 days.
