Protein Coffee Bites

I use these protein-rich coffee bites a lot when I need a quick pick-me-up for more energy and brain fuel. I try to limit my use of caffeine after 2-3 pm, but before 2 pm I have no issues with coffee because genetically I have an intermediate metabolism of caffeine. If you believe you may be a slow metabolizer of caffeine, I would limit your coffee intake to 1 cup early in the morning… and definitely, no coffee protein bites!

I also tried to make the same protein-rich bites with matcha green tea, but I was greatly disappointed because all the matcha powder went down to the bottom of the dish while it was in the fridge.

Ingredients:

  • 3 cups of brewed coffee (or Americano espresso, depending on your preference)
  • 1/2 cup cold water
  • 2 teaspoons monk fruit sweetener
  • 6 tablespoons grass-fed collagen
  • 3 tablespoons grass-fed gelatin
  • 2 tablespoons of maple syrup or substitute with monk-fruit sweetener (I am not a fan of stevia aftertaste, but it is just a personal preference)
  • coconut sugar or monk-fruit sweetener for sprinkles

Directions:

  1. Add 1/2 cup of cold water to a bowl or liquid measuring cup and sprinkle with gelatin powder.
  2. Whisk together to combine and allow to sit for 3-5 minutes to “bloom.”
  3. Pour the remaining (3 cups) of coffee and sweetener into a medium saucepan. Heat over medium heat until almost boiling.
  4. Remove from heat and add the bloomed water/gelatin mixture and collagen. Mix to dissolve or use an immersion blender to mix the mixture.
  5. Pour into an 8×8 glass baking dish.
  6. Refrigerate about 4 hours, or until set. Cut into pieces and sprinkle with coconut sugar or monk fruit sweetener.
